3/4 cup butter milk (see here to make your own i used white vinegar)
zest of 2 lemons, finely grated
1/3 cup fresh lemon juice
1 cup butter (approx. 226grms) softened
2 cups sugar
5 eggs, room temperature
3 cups floor
1 1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
Preheat oven to 175 degrees C (350F) placing rack in the lowest position.
Butter and flour two loaf pans (or two round pans or two pans of your choice!)
In a measuring cup combine the butter milk, zest and lemon juice.. set aside
In a medium bowl combine the flour, salt, baking powder & baking soda.. whisk together
Either by hand or if you are so lucky to own an electric mixer,
cream the butter and sugar in a large bowl until light and fluffy
add eggs one at a time, beating well after each addition
Putting mixer on low, add the flour mixture in three parts alternating with the buttermilk mixture in two parts... make sure you begin and end with the flour mixture.
Be careful to not over beat... after each addition ..just mix it till it is smooth
Over beating will cause the cake to be dry and loose it's fluffy consistency..
Divide batter evenly between the two pans.. smooth the tops with a spoon.
Bake in the oven until a toothpick inserted comes out clean...for approx 45-60 min
(if it starts to brown too quickly, lightly cover with some foil)
Leave to cool in pan for 5-10 min then take out and let it rest.
Cool completely before adding the lemon glaze...

2 cups icing sugar
3-4 tblsp fresh lemon juice
Place icing sugar in a bowl and stir in the lemon juice..
glaze should be fairly thick yet pourable
you can add more of each to reach the desired consistency!
When cakes are completely cooled... it's time to glaze :)
Place cakes on a sheet of baking paper (or only our desired serving tray)
pour glaze over top of the cake.. allow it to drip a little down the sides and let it set for 30 min.
